Episode Description: Jessica B. Harris may have been born and raised in New York City, but she has Tennessee roots through her father and has spent much of her life split between homes in the Northeast and the South – specifically New Orleans. For more than fifty years, she has been a college professor, a writer, and a lecturer, and her many books have earned her a reputation as an authority on food of the African Diaspora, as well as a lifetime achievement award from the James Beard Foundation. A few years back, Netflix adapted her book, High on the Hog: A Culinary Journey from Africa to America , into a 4 part docuseries. And I’m very proud to say that she’s a longtime contributor to Southern Living with a regular column called The Welcome Table. This episode was recorded in the Southern Living Birmingham studios, and Sid and Jessica talked about her mother’s signature mac and cheese, the cast-iron skillet she’d be sure to save if ever her house were on fire, and her dear friend, the late New Orleans chef Leah Chase. Photoshop Tutorial - Spot Channels for PrePress and Printing

This Photoshop video tutorial will introduce Alpha Channels. This is the second of four videos about working with channels. We will explain what Alpha Channels are, and how they differ from regular Color Channels. Before you watch this video, we recommend you watch the previous Adobe Photoshop tutorial about Color Channels, and you can then follow this one with Spot Channels, and the Channel Mixer.

Alpha channels are additional channels that can be added to an RGB or CMYK image. They are generally used to hold complex masking information. While layer masks can hold the same information, Alpha channels allow you to have access to that mask, but not have it actually used within the image. As an example, if you mask a person, you can use an Alpha Channel to hold the mask of a full person from head to toe. You can then use a layer mask in the image would contain parts of that person, like the arms, legs, face, etc. So basically, the Alpha Channel holds the full figure, and the layers use parts of that mask. But again, this is only an example. In the end, it is only a dummy layer used to hold information that you may need later.

What is the difference between editing images in 8-bit or 16-bit? While it should be obvious that 16-bit color is significantly better than 8-bit color. After all, 8-bit is only 16.7 million colors when comparing that to 16-bit which is 2.81 Trillion Colors. However, it just doesn't seem that way to the naked eye. Aside from the Lasso-based tools, we can also use the Magic Wand when it comes to making selections in Photoshop. You can press and hold the Quick Selection Tool to choose the Magic Wand Tool. When you click on a section in your image, it selects an area based on the range of colors that your provide, limited by the value of your Tolerance in the Options bar. Photoshop’s default Tolerance is 32, but you can increase or decrease that value to grab more areas at once or less areas at once respectively. The purpose of making a selection, is so that you can make changes within a limited, and controlled area.There are a variety of tools you should consider when making selections in your image. There are several that will allow you make direct selections by drawing them, and a few that let you make your selections based on color. Selective Color is the go-to tool for simple color correction. Little need for masking, and no confusing RGB sliders. You just need someone to give you a little direction, and you will find how easy this tool can be. As with the other Adjustment Tools, you can find it with the Adjustments Palettee, which is found within Window – Adjustments. Let’s say you have an image that’s looking pretty pale. When you want to adjust the saturation of an image, I normally don’t recommend using the Saturation Adjustment. Instead, what we’ll be using is the Vibrance Adjustment, because it has Saturation included, and gives you more control over your adjustments. When you want to create tonal changes the easiest and simplest way possible, your best bet is to use Levels. Simply go over to the Adjustments palette (or if it isn’t open yet, go to Window – Adjustments). There, click on the icon that says “Levels”.
